Welcome to November! Who else has a candy hangover? I don’t love candy but my kids always offer me their best pieces and it’s hard to resist their cute little Halloween faces. In all seriousness, I love sweet stuff, I just don’t buy candy. One sweet thing in particular that I love is pumpkin–pumpkin everything. Yes, I’m one of those Starbucks’ Pumpkin Spice Frappaccino-obsessed people. I actually prefer the Salted Caramel Mocha, but whatev.
On my old site I had a pumpkin banana bread recipe that I thought was really delicious. I decided I wanted to add it to Walls of Wonderland so I needed to make it this week to be sure everything was just right before I shared it. I tweaked the recipe just a little and omg it truly is the best-ever pumpkin banana bread. Way better than anything you’ll find at Starbucks (actually, their banana bread really isn’t that good) or anywhere else. I was not expecting it to be this delicious. I was going to call it ‘So-So, Mediocre Pumpkin Banana Bread’ but I had to change the name to ‘Best-Ever Pumpkin Banana Bread.’ 😉
This recipe is super easy to make! No mixer or special tools required. Enjoy it for dessert or bake multiple loaves to give as gifts—your recipients won’t be disappointed.
Best-Ever Pumpkin Banana Bread
Ingredients
- 2 ripe bananas large
- 1 cup pure pumpkin
- 1/3 cup butter melted
- 1 cup sugar granulated
- 1/2 cup brown sugar packed
- 1 egg large
- 1 1/2 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/4 tsp salt (optional)
- 1 tsp baking soda
- 1 1/2 cups flour
Instructions
- Preheat oven to 350 degrees
- Butter 9X5" loaf pan
- In a large mixing bowl, mash bananas and stir in pumpkin
- Next add melted butter, both sugars, egg, and vanilla--mix thoroughly
- Stir in pumpkin pie spice, baking soda, and salt
- Last, add flour--mix thoroughly
- Pour into buttered loaf pan and pop in the oven
- When edge are golden brown and insterted toothpick comes out clean, remove from oven
- Cool for 1 hour
