Valentine’s Day Rice Crispy Donuts

If you know anything about me, you know I love rice crispies. I make them every chance I get. Last year, I made rice crispy donuts for my stepson’s school birthday celebration. They were a huge hit and I’ve often been asked to make them again. This year, I decided to make these fun treats with a Valentine’s Day theme for my first grader’s class Valentine’s Day party.

While I’m usually on my own making these treats, this time Huz was in the kitchen with me the entire time. We had a blast creating and then decorating these donuts (while snacking a little in between). Note: These are definitely easier to make with two people. Melted chocolate is hard to get just right so when you have one person stirring continuously, and the other dipping the donuts, making these is a breeze.

We started out by making the rice crispies just as the box of Rice Krispies instructs, except we doubled the amount of butter. Doing so makes the crispies chewier and more delicious. We then spread the crispies onto a baking pan and started filling our donut pans. While you will need to let the crispies cool for a few minutes, you don’t want to wait too long as they tend to harden up rather quickly. Once you have your donuts formed, move them to a plate or platter and start melting the chocolate.

To melt, we placed the chocolate in a bowl sitting in a pan with shallow water on the stovetop. We cooked it on low heat which melts the chocolate evenly. Note: I don’t recommend melting chocolate in a microwave.

Once the chocolate was completely melted, we dipped the tops of the donuts into the chocolate and placed them on a platter. You will want to do this quickly before the chocolate hardens. While I was dipping the chocolate, Huz started on the sprinkles. And then we traded jobs with each color we used. Once the donuts were sprinkled, we waited about 30 minutes for the chocolate to harden and then arranged them on platter and wrapped them up…but not before tasting them! Our kids gave me the approval to go ahead and share this delicious ooey gooey recipe. I have to thank Huz for being my chocolate stirrer, mastering the art of sprinkling faux donuts, and giving me a fun date-night in.

To make Valentine’s Day Rice Crispy Donuts:

 

Ingredients:

 

Valentine's Day Rice Crispy Donuts

 

  • Rice Krispies Cereal (1 Box)

 

  • Unsalted Butter (Recipe Calls for 3TBS–I Doubled It & Used 6TBS)

 

  • Marshmallows (1 10oz. Bag)

 

  • Chocolate Melts (I Used Pink, Red, & White)

 

  • Sprinkles

 

  • A Donut Pan (If You Don’t Already Have One)

 

Instructions:

 

  1. Make rice crispies according to box. Note: I quadrupled the recipe in order to make around 35 donuts. I also doubled the amount of butter the recipe needed. Recipe called for 6 cups rice krispies cereal, 3 tbs butter & 1 10 oz. bag marshmallows.
  2. Let crispies cool 10 minutes and then fill donut pan.
  3. Move formed donuts to platter and heat chocolate.
  4. Dip donuts in chocolate.
  5. Sprinkle donuts.
  6. Wait for chocolate to harden & serve.

 

Donuts will stay fresh for up to a week in air-tight container.
